Blackberry Cobbler

Blackberry cobbler has always been a family favorite.  As far back as I can remember, my mom would give us a bucket and send us out to pick blackberries, then she would bake us a cobbler.  I did the same with my kids and now my granddaughter is enjoying my blackberry cobbler.

3 lbs. blackberries, fresh or frozen

1/2 c. sugar

1 T. butter

1/4 t. cinnamon

1/2 t. vanilla

1/4 c. uncooked tapioca

Pour all ingredients into a deep pot and cook until berries start to thicken.  Pour into a buttered 3 quart glass baking dish.

Cobbler Topping:

3 c. Bisquick

1/3 c. sugar

2 T. melted butter

1 c. water

Mix all ingredients together, just until lumpy.  Don’t over mix.  Dollop onto berries.

Bake at 350 for 40-45 mins, or until top is golden brown and biscuit topping is cooked through.  Serve warm with vanilla ice cream.  Enjoy!

  1. This post brings back more memories from my early teen years in the Berkshires of western Massachusetts where, it seems all the same berries abound as they do in your world in Oregon.
