Blackberry Cobbler

Blackberry cobbler has always been a family favorite.  As far back as I can remember, my mom would give us a bucket and send us out to pick blackberries, then she would bake us a cobbler.  I did the same with my kids and now my granddaughter is enjoying my blackberry cobbler.

Berries:

3 lbs. blackberries, fresh or frozen

1/2 c. sugar

1 T. butter

1/4 t. cinnamon

1/2 t. vanilla

1/4 c. uncooked tapioca

Pour all ingredients into a deep pot and cook until berries start to thicken.  Pour into a buttered 3 quart glass baking dish.

 

Cobbler Topping:

 

3 c. Bisquick

1/3 c. sugar

2 T. melted butter

1 c. water

Mix all ingredients together, just until lumpy.  Don’t over mix.  Dollop onto berries.  

Bake at 350 for 40-45 mins, or until top is golden brown and biscuit topping is cooked through.  Serve warm with vanilla ice cream.  Enjoy!
