Beef and Broccoli

IMG_4469This is a great recipe for a quick dinner.

1 1/2 lbs. flank steak, sliced

2 T. cornstarch

3 T. olive oil, divided

salt

pepper

1 t. ginger

1 t. garlic, minced

3 c. broccoli florets

3 T. sweet chili sauce

3 T. Hoisin sauce

Heat 2 T. of olive oil in a large pan, along with the garlic and ginger.  Put beef and cornstarch in a large Ziploc bag and shake to coat.  Sauté beef in the oil with salt and pepper.  Remove beef from the pan and set aside.  Add remaining olive oil into the pan along with the broccoli, sauté just until tender, but not soft.  Add beef back into pan along with the sweet chili sauce and hoisin sauce.  Cook until flavors are well mixed and the beef is heated through.  Enjoy!

Pumpkin Bread

IMG_4891One of my very favorite things about fall is pumpkin, anything pumpkin.  This is a simple recipe that makes three loaves of moist, tasty bread.

2 1/2 c. flour

2 T. baking soda

3 c. sugar

1 t. salt

3 t. pumpkin pie spice

1-30 oz can of pumpkin

4 eggs

1 c. vegetable oil

Preheat oven to 350 degrees.  Mix dry ingredients until well blended.  Add remaining ingredients and mix well.  Divide pumpkin batter into three greased loaf pans.  Bake for one hour or until bread is golden brown.  Enjoy!

Turkey Stir Fry

This is one of my favorite dinners.  It’s a rather easy recipe, it’s healthy and it’s tasty.

1 T. Extra Virgin Olive Oil

1/4 t. Minced Garlic

1/2 t. Minced Ginger

1 1/2 lbs. Ground Turkey

1 1/4. c. Carrots, shredded

1 1/4 c. Bean Sprouts

1/2 c. Peanuts, chopped

1/4 c. Fresh Cilantro, chopped

1/4 c. Sweet Chili Sauce

1/4 c. Hoisin Sauce

1/2 t. Fish Sauce

 

Heat olive oil in pan, add garlic, ginger and turkey cook until turkey crumbles, but not completely cooked through.  Add carrots and sprouts, cook until vegetables are tender.  Add peanuts, cilantro and sauces, cook until flavors blend and it’s hot through out.  Enjoy!
