This is such a great side dish. It is very popular in the South. The first time that I had it was in Louisville, Kentucky on Kentucky Derby weekend. It quickly became one of my favorites.
1 1/2 lbs. fresh green beans
1/4 c. diced onions
1 T. butter
1 t. minced garlic
5 strips bacon, cooked and crumbled
1 large tomato, diced
Steam green beans and onions in chicken stock until green beans are tender, but not soft. Drain green beans. In pan, put all remaining ingredients along with the green beans. Cook until flavors are well mixed. Enjoy!
This is one of my favorite “go to” side dishes. It’s very easy and tasty, too.
2 lbs. Fresh french style Green beans
1/2 c. Almonds, sliced
1 T. Butter
Boil green beans in chicken stock, just until tender. Drain chicken stock, but leave green beans in the pot. Add butter and almonds. Cook just until butter is melted and beans are well coated. Add salt and pepper to taste. Enjoy!
